Hmmm - how about: 

- a menu function to create, rename, or delete new categories
  (i.e. subdirectories)
- in the "edit timer" menu, a function to set a recording's category, and
  choose from the available categories
- in the "recordings" menu, a function to move a recording to another
  category.

At the moment, this is not mother-in-law safe, as long as you have to
either enter a subdirectory by hand (error-prone and annoying with the
remote control) or access a shell.
