The syslog entries can't show any falling values because of the 

  if (fill > maxFill) {

test. If you disable that test you should see the buffer level in real time.

I'm currently doing a lot of testing, but recording (once it actually has started)
has always worked so far. What I do have observed are cases where recording doesn't start
at all because the driver doesn't deliver any useful data. I'll implement a watchdog
tomorrow that continuously checks whether there is data coming in, and initiates
a restart of VDR if anything should go wrong.
