If you don't use DMA the CPU is in charge to move data from one point to 
the other.
If you use DMA = Direct Memory Access it work's faster because the CPU 
doesn't have to take care of the data movement.

OK it's a very simple description ;)

Result:
-Less CPU usage
-Faster harddisk operations

Try "hdparam /dev/hdX" and you'll see the parameters
"hdparm -h" tells you all possible switches.
