I've got similar problems with lcdproc when I started using a display from eBay.
It's based on different charsets of the LCD.
If you dig into the LCD spec: my LCD has a different character for the fully displayed bars. It shows a small "p" in a box instead of the full box.

So i've modified lcdproc (ver0.4.4) to replace the full box with a custom char making the bargraphs ok (watch out as the custom chars are normally all assigned allready).
For "Umlaute" this is not possible but I found a way in lcdproc to replace ä,ö,ü with their transcriptions (ae, oe ue) on the fly.
The mod is specially designed to work on a 20x4 LCD so I also modded the title strings of the LCD output pannels to not was that much space left and right of the title string (and cause left-right scrolling)
