I can heartily reccommend the Seagate Barracuda V drives - we built a 5 drive 
IDE RAID of them at work, and even putting your ear right up to them you 
cannot hear the drive spinning, or working :)

In fact the only detectable noise is when they spin up initially, and that's 
marginal.
