You can try MPlayer.  option -pp can be used to do progressive scan
conversion.
It worked on tests i made with Video Materiel (TV Show) and films.

MPlayer can read VDR files, use bicubic scaling to output on X11 screen
using Xv or can use Matrox and ATI Back End Scaler (even adatative
deinterlacing on Radeon). 
This development is really promising but you will need to wait a little
(or use CVS) to have a complete stable documented solution.

Depending on you Projector (the ones with good deinterlace chips as
Faroudja DCDi or Pixelworks or Silicon Image), you can just output
interlace signal (SVIDEO or YUV) using H+ card with MPlayer.
