This "problem" arises from the fact, that the epg info for a channel can
only be read when you tune to the transponder the channel is on. So if
you dont watch a specific channel for some time vdr will "run out" of
cached epg info leading to the described symptoms.
You can adjust the "EPG-Scan Timeout" in the VDRs settings menu.

You should slap your cable company. What they do is the "good old(tm)"
version of multichannel sound.
This has nothing in common with multiple sound channels as they are
defined for DVB.
IIRC there was a discussion about this some time ago on this list (you
can find archives on linuxtv.org).
